I did nothing for a month, can you imagine how bored I am?
I'm just doing like a full housewife. Being unemployment is such a fool I think. So, Lately I didblogwalking for one of my daily activities and this activity made me stop by to some blogs which contain a lot of recipes easy to practice (hehehe. act like a cook). I interested to cute cupcake and really wanted to practice. Then, I decided to start trying recipe from Joy of Baking. Her recipe is easy to practice and the ingredients were available in my town (actually my mom's kitchen.hehe).

wohoo those are my first experiment making vanilla cupcake with buttercream frosting and little technique of piping buttercream using any tip shape. But I won't tell the recipe now. Because I think the taste was awful. hehehe. I didn't know what happened with my cute cupcakes. Failed at first try is forgiven right? (defensive attitude detected).
In this post, I will share my second experience making cupcake with recipe from Dapur Mama Aisyah. Her post made me want to bite my laptop. So I want make my own yet unfortunately I didn't have buttercream ingredients so I just changed em with my recipe I've done before and few modification.
- 160 g all purpose flour
- 2 tbsp corn starch
- 1 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 150 g granulated sugar
- 1 1/2 tsp vanilla extract
- 120 ml vegetable oil
- 120 ml milk
- 1 tbsp lime juice
- Making cake flour substitution : from 160 g all-purpose flour, take out 2 tablespoons of flour. Then add 2 tablespoons of corn starch in all-purpose flour. Sift the flour and corn starch together 2-3 times. I knew this technique from Eugenie Kitchen
- Add flour, baking powder, baking soda and salt in a bowl. Whisk em together and sift the flour mixture.
- Homemade buttermilk : The original recipe from "Dapur mama" suggest to use buttermilk yet I didn't have it, but don't worry she shares how to make home made buttermilk. It's so simply step. Just add in lime juice to milk and let them sit about 15 minutes to thicken.
- Preheat oven. I don't have electric oven, I just used conventional oven heated by stove. Turn it up to medium heat.
- Beat eggs with electric mixer on medium speed about 20 minutes.
- Add in sugar still on medium speed about 30 seconds.
- Add oil and vanilla extract.
- After a minute, turn speed down to low. Then add flour mixture in 2 parts, alternate with buttermilk. After each addition, beat until combined. Be careful not to over beat.
- Spoon the batter to cupcake pan lined with cupcake paper. Fill them only 2/3 full.
- Bake the batter for about 30-45 minutes in the oven until risen and the batter color changes to golden brown. Let cupcakes cool before you decorate them.
ingredients:
- 100 g White margarine
- 50 g salted margarine
- 150 g powdered sugar, or optional amount
- 10 pieces oreo
- 3-4 tbsp milk
- Crush your oreo with food processor until you get sandy oreo.
- Beat white margarine and salted margarine together in electric mixer on high speed about 20 minutes. Actually the original vanilla frosting recipe from "joy of baking" used unsalted butter but I don't have it in my town so I just change it with white margarine (I don't know what you called it, the margarine color is white and plain. Some people call it "shortening") but I don't like the taste, then I add salted margarine in order to get better taste result.
- After 20 minutes turn speed down to low. Then add powdered sugar and oreo crushed slowly, beat until homogenous.
- Correct the sweetness of buttercream as you liked with adding powdered sugar.
- After you get your favorite buttercream taste, Adjust the thickness with adding 3-4 tablespoons milk.
